Free Range Pork Loin Roast

COOKING TIME:

45 minutes

REST TIME:

10 minutes

 

COOKING INSTRUCTIONS:

  1. Remove the pork loin roast from the fridge and cover with salt. Let it sit outside the fridge for one hour to come to room temperature.
  2. Once done wipe off the layer of salt with a paper towel and place in a pre- heated oven at 220°C for 20 minutes, then turn down to 160°C and continue to cook for a further 25 minutes per 500g or until the internal temperature reaches 70°C.
  3. Rest for 10 minutes and remove the string before slicing.
