Panettone by Luca Ciano 750 g

Panettone is the Christmas cake of Milan, and this is the classic: hand-wrapped, and made in Italy for Chef Luca Ciano by Chiostro di Saronno.

It is a sweet bread. The dough is cured until it turns acidic, the way a sourdough does, and the proofing alone takes several days. That long rise is what gives the loaf its light, fluffy crumb. The sultanas and candied orange peel are folded in dry, never soaked, so the fruit stays distinct in the slice.

Cut it vertically and serve it with a sweet hot drink or a glass of sweet wine. The loaf is 750g, about nine slices.

Contains gluten, egg and milk. Keep it for up to 9 months.

Ingredients: wheat flour (gluten), water, sultanas (13%), sugar, butter (milk), candied orange peels (9%) [orange peels, glucose-fructose syrup from wheat (gluten), sugar, acid (330)], yeast, egg yolk, emulsifier (471, from palm oil and rapeseed oil), salt, milk solids, flavours.
